My Top 3 Quick Recipes
So there have been many recipes that I’ve tried since living in the city. I thought I would begin sharing my food experience and my path to healthier, fresh eating.
Here are my first three recipes so far.

Items I always keep in the kitchen are cumin, cilantro, chorizo, olive oil, and garlic cloves
1. Chorizo Breakfast
Prep time: 15 minutes Cook time: 25 minutes
1/2 lb chopped sausage link 1/2 tube of chorizo 6 eggs 2 medium sized potatoes or 1 sweet potato 1/4 cup of cilantro 1/2 cup of cheese 2 garlic cloves 1 chopped green onion 2 tbsps of salt and pepper 2 tbsps of chipotle seasoning
Chop up the potatoes in half then in slices. Fry the potatoes in olive oil with garlic, salt, pepper, chipotle seasoning, and green onions until the potatoes are golden brown. Begin frying the chopped sausage. After it has been slightly browned, add the chorizo. Once the chorizo has been softened and fried, add whisked eggs, cilantro, and potatoes. Stir with a spatula until the eggs are cooked. Once the combination is done, top with cheese then serve.
2. Tomato Chipotle Soup
Prep time: 15 minutes Cook time: 45-60 minutes
1 lb cooked chicken breast, cut into cubes 1 can chicken broth 1 can diced tomatoes 1 can of Campbell’s Tomato Chipotle Olive Oil soup – or 1/2 can of whole chipotle peppers 1 bag of zucchini and squash mixed 1/2 bag of frozen peas 1/2 bag of frozen corn 1 small diced onion 2 tbsps of chipotle seasoning 2 tbsps of crushed red pepper 1 oz. of unsweetened chocolate (I have a Baker’s bar) 2 tbsps of salt and pepper 2 tbsps of cumin 2 crushed garlic cloves 2 tbsps of olive oil 2 cups of water
Turn stove on low-medium heat. Combine chicken broth, diced tomatoes, Campbell’s soup, and water in a pot and let it boil. Once it reaches boiling temperature, add all other ingredients. Cook on low for 35-45 minutes or until ready to serve.
3. Homemade Salsa
Prep time: 25 minutes
6 fresh tomatoes 2 garlic cloves 2 tbsps of salt and pepper 2 tbsps of cumin 1 small diced onion 1 lime 1/2 cup of cilantro 1 jalepeno 2 tbsps of sugar or as needed
Chop all vegetables in preparation for the food processor. Combine all ingredients in the food processor, then grind until preferred chunkiness. Pour into a sealed container, and place in the refrigerator over night.
